Pian delle Querci is a family-run winery led by experienced winemaker Pinti Vittorio. We do not use herbicides — instead, we work the soil multiple times throughout the season to keep it free from weeds. For treatments, we pass through the vineyards several times and apply copper flakes diluted in water, along with lime and sulfur, just like it was done in the past. No chemical fertilizers are used; we rely exclusively on organic compost.
This philosophy is the same one we apply to what we eat at home, using only genuine, natural products. We believe that what we feed our animals ends up on our plates — and in our case, what we do in the vineyard and the cellar ends up in the glass.
We follow this same principle in the cellar: no industrial yeasts are added, and spontaneous fermentations take place slowly in stainless steel tanks. Afterward, the wine is aged in large 50-hectoliter Slavonian oak barrels.
Our wines are the pure expression of what this land can offer.

GRAPE HARVEST
Manual choice of the grapes, put gently and straight into the hopper of the stalk-remover.
VINIFICATION
Intense extraction with frequent repassings of must over the grape dregs in the early stages of the fermentation, followed by middle-long soaking quiescent on the marcs. Accurate control of the temperature which reaches 33 degrees centrigrade at the most.
BARREL AGING
A stay of at least 3 years in new oak casks.
BOTTLE FINING
At least a 6 months’ period in the bottle, as stated in Brunello production regulation.
